Florida, The Trip Of A Lifetime!

Ok, I admit it, I’m a creature of habit. Killarney is my repeat stay-cation destination and when we travel abroad for a family holiday it’s always to the same spot in the south of France. So when Peter and I realised that our girls were fast-approaching the age when they might be too old to appreciate the magic of Disney, or more importantly the company of their parents on holiday, we decided to go for the family holiday of a lifetime to Florida. We kept the trip as a surprise until the last minute (leaving for Dublin airport). Their reaction…

Let’s Talk Hormones

Here’s something I’m really passionate about. Too many of us just aren’t aware of the impact our hormones have on our physical and mental health. This is something that effects all women, young girls, from the age of puberty onwards and knowledge is key. I have chaired and spoken at many conferences on women’s health and have learnt so much from wonderful women like Dr Mary Ryan (pictured above) a leading endocrinologist. There is a free hormone guide available on the Cleanmarine website (Cleanmarine are an Irish company who produce natural Omega 3 and vitamin blends to help to regulate…

Try My Thai Recipe At Camile!

One of my favourite thai restaurants, Camile Thai has asked me colloborate with them as guest chef and I’m delighted! I’ve developed a delicious tonkotsu chicken stir-fry with broccoli, mushrooms, spring onions, onions and peppers with oyster sauce, ginger and a hint of chili. There’s a vegetarian version too and so far the feedback has been very positive. It’s available for a limited time, so check out their locations countrywide here I was also interviewed by Irish Tatler magazine about the collaboration. You can read about it HERE

St Patricks Day Celebrations VIP style!

There is no doubt about it, if it wasn’t for the St Patricks Day festival Committee and Marks and Spencer showing us such a good time every year and allowing us to do the St Patricks Day parade VIP style, my daughters would not be quite as patriotic!  Champagne breakfast (admittedly, that’s more about me!), escort to the GPO avoiding all crowds, seats under a sheltered canopy (yes, I did say SEATS! None of this shoved up against a barrier and standing in the cold for hours like in MY day as one of 7 children) And being seated beside…

Ile de Ré, France – Chic et Fantastique!

I have always loved visiting France, ever since my ‘Tante Lizzie’ introduced me to her Parisian home in the late eighties. She was French correspondent for the BBC and was the first person to tell me about Ile de Ré – many, many people have told me about it since.  It has taken me this long to finally visit it, but it was well worth the wait. We decided to take the car on the Stenaline ferry (from Rosslare), as we’d heard too many horror stories of holidays ruined by the recurring French Air Traffic Controllers’ summertime strikes (more than 50…
